One of the many softneck varieties, Inchelium Red is widely recognized for its smooth yet rich flavor and long shelf life. Originally found in Inchelium on the Colville Indian Reservation, this heirloom garlic flourishes in several climate conditions and is well suited for both home gardens and market growers. When planting Inchelium Red, space the cloves 6–8 inches apart in well-drained, fertile soil that receives ample sunlight. This variety boasts large, tightly wrapped bulbs, each bearing 10 to 20 cloves, providing for a good yield and further versatility in uses. The garlic is famous for early harvesting and long shelf-life properties: if cured well, it could stand for 9 months. Flavor-wise, it is tender and mellow when cooked, while raw garlic offers the kitchen a strong presence; this is among the reasons for its fame and popularity in kitchens around the world.
